Asparagus come in different colours, purple, white and green. The most common is green but we rather love the purple variety! Perfect spring food which is very low in carbohydrates but contains many nutritional benefits along with magnesium, folate, Vitamins A, C, E and K.
400g fresh asparagus
Drizzle olive oil
Salt and pepper to taste
Heat the oven to 200C/180C fan/gas 6.
Snap any woody tips off the asparagus where they naturally break apart.
Put on a roasting tray, drizzle with oil, sprinkle with zaatar and season with salt and pepper.
Roast for 12 mins until they are tender. Great as a side or with a poached egg on top!
